The Food Science and Human Nutrition Department is dedicated to research that generates knowledge about food and nutrition, enhancing human health and increasing quality of life. Whether our research is performed at the bench top or out in the field studying animals, humans, or populations, find answers to some of the most burning questions around nutrition and health, food, food safety, functional foods, and flavors from our expert faculty. Whatever the research paths we follow, we strive for results that are wholesome, safe, and tasty!

Here is a sample of some of the cutting-edge research in our department:

  • Molecules: flavor volatiles, transcription factors, ingredients that provide health benefits
  • Pioneered consumer-driven plant breeding for better tasting fruits and vegetables
  • Microorganisms: sources of food contaminants, creating foods through fermentation, role of gut microbes in brain health
  • Micronutrients: zinc, iron, B vitamins
