Program Overview

The Master of Science – Dietetic Internship (MS-DI) Program at the University of Florida offers a dynamic and challenging environment in which to fulfill the final educational step in becoming a registered dietitian (RD)/registered dietitian nutritionist (RDN).

The University of Florida’s MS-DI program is a two year program (i.e., six consecutive semesters) designed for students who want to complete a graduate degree in nutrition with a strong science base and who want the opportunity to develop skills and competence in a variety of practice settings. Our multi-faceted approach to education helps students develop critical thinking, analytical, and problem-solving skills and positions graduates to be successful in their chosen areas of dietetics practice. Our program includes:

  • Experience in developing nutrition education and wellness programs for target groups as part of our Nutrition Education and Wellness concentration.
  • Experience developing a business plan for nutrition-related nonprofit organizations.
  • Experience developing and conducting a nutrition-related research project.
  • Core internship rotations in community, food systems/service management and clinical and critical care nutrition, as well as a clinical staffing experience rotation.
  • Specialty rotations in long-term care or wellness.
  • An outpatient rotation in a specialty practice area based on student interest; potential choices include diabetes, renal, pediatrics, eating disorders, and comprehensive outpatient care.
  • Graduate coursework leading to a Master of Science degree (non-thesis) in Food Science and Human Nutrition from a prestigious university recognized by the Association of American Universities.

Nutrition Education and Wellness Concentration

The Nutrition Education and Wellness concentration provides students with the opportunity to develop effective nutrition education and communication skills and to gain experience with planning, developing, implementing and evaluating programs that support and improve healthful behaviors, skills that are essential to most areas of dietetics practice. Students also gain experience with the governance, strategic planning, fund raising, risk management, policy, decision-making and planning functions of nonprofit organizations. Nutrition and health-related non-profit organizations play important roles in promoting consumer health, wellness, and lifestyle management. The knowledge and skills gained in developing a business plan for a non-profit organization could position the graduate for unique employment opportunities.

Nutrition Education and Wellness Competencies

In addition to the Core Competencies for the RD/RDN, students completing the Nutrition Education and Wellness concentration will:

  • Conduct literature reviews and interpret and evaluate food, nutrition and nutrition education research, consumer issues, and nutrition education materials and programs.
  • Conduct needs assessments for targeted community-based groups.
  • Develop food and nutrition education programs and materials for diverse populations.
  • Apply relevant education and behavioral sciences theories and techniques to modify nutrition and health behaviors for individuals and groups.
  • Develop, market, conduct, and evaluate food and nutrition education programs/training sessions that demonstrate effective use of oral and written communication skills and technology.
  • Develop an in-depth business plan for a nutrition/health-related non-profit organization that incorporates knowledge of governance, strategic planning, fund raising, risk management, policy, decision-making and planning functions of nonprofit organizations.

Program Outcomes

Students who successfully complete this program will:

  • Earn a Master of Science degree in Food Science and Human Nutrition.
  • Complete an accredited dietetic internship program.
  • Be eligible to take the Registration Examination for Dietitians.
  • Be eligible to apply for licensure by endorsement in the state of Florida and to apply for licensure in other states using the process designated by those states.
  • Be prepared to assume an entry level position in community nutrition, clinical practice, food service management, and other related positions.

Selection Process

Applicants must be accepted into the Food Science and Human Nutrition Department and must complete the online centralized internship application (DICAS) by FEBRUARY 15, 2018, 11:59 PM CENTRAL TIME, to be eligible for consideration for the computer match. (The online application for DICAS can be accessed at The fee to use DICAS is $45 for the first application submitted and $20 for each additional application.

Applicants conditionally accepted into the Food Science and Human Nutrition graduate program will be ranked based on their GPA, GRE, and supporting materials (i.e., applicant’s letter of interest, letters of recommendation, the strength of the applicant’s course of study and performance in biology, chemistry, biochemistry and related courses, experience, and accomplishments.). All MS-DI program applicants must participate in the D&D Digital computer matching process. In order to be considered for ranking, applicants must include our program as one of their prioritized selections on , along with the service fee ($50.00). No later than February 15, 2018. Our list of ranked applicants will be submitted to D&D Digital Systems for processing. The final selection of students will be made using the D&D Digital Systems computer matching service.
