  • Flavor chemistry of citrus and tropical: juices, beverages, oils and essences
  • Understanding the human perception of flavor
  • GC-olfactometry, electronic noses, mass spectrometry, etc. to characterize and identify flavor impact compounds
  • Flavor precursors and off flavors
  • Development of flavor models based on multivariate statistics
  • Flavor stability, citrus juice composition, instrumental and sensory analysis.
  • Carotenoid biochemistry as pigments and flavor precursors
