Nutritional Sciences

Nutrition is in the news nearly every day. The study of Nutritional Sciences aims to understand the relationships between diet, health and disease. For example, what food components affect your risk for chronic diseases such as cancer or heart disease? Can dietary supplements enhance your physical or mental performance? Do low-carbohydrate diets work? In the FSHN Department, we address these questions and many others through undergraduate and graduate courses, research and extension programs. Key areas of study in the Nutritional Sciences specialization include: biochemical and molecular aspects of nutrient metabolism; the impact of diet on the health of individuals and populations; and nutrition-related policy and public health issues. The Nutritional Sciences curriculum develops a strong background in biology, chemistry and math, making this specialization suitable for pre-professional students who plan to enter medical, dental, pharmacy, or other health professions.

A degree in nutrition affords you with a wide array of career options, ranging from public health nutritionist, nutrition educator, pharmaceutical sales representative, or research scientist in biotechnology, government or medicine. Students interested in research often go on to graduate school to earn a Masters or PhD degree in nutrition or a related field.
