Welcome to our website! The Department of Food Science and Human Nutrition at the University of Florida is a dynamic team of faculty, staff, and students working as partners in a wide range of interests within the world of food and nutrition. In terms of numbers of faculty and students, research productivity, and variety of programs, we are among the very top programs in the world focused on both food science and nutritional science issues.

There are so many current and pressing issues our faculty and students are working to solve. Among a very long list, some of the major interests of our department address ensuring a safe food supply, with a special emphasis on seafood, fruits and vegetables, and dairy products; cutting-edge research in vitamins and minerals; sensory evaluation of food and juice products; understanding how nutrition impacts the function of the human immune system; molecular nutrition; and the study of how food products, food components, and functional food ingredients impact health and disease.

Our students come from all over the world and have opportunities to interact often with our faculty in traditional and non-traditional classroom learning, in outreach activities, offsite at field stations, as well as in our research laboratories. Our faculty are recognized around the world as experts in their areas ranging from molecular nutrition to food safety. Both undergraduate and graduate students have opportunities to customize their educational plan and conduct novel research in the laboratory.
