Welcome

Thanks for visiting the Web site of Dr. Susan Percival, Professor of Nutrition.

The research in our lab focuses on modifications of the immune system by dietary factors. We study many different nutritional factors in a variety of model systems. This page shows the commodities we have worked with over the years. Here is a recent video on an experiment we did looking at spices in inflammation.

Dr. Percival's labs are located in Rooms 449 and 429 of the Food Science and Human Nutrition Building on the University of Florida campus (see map). Please feel free to visit anytime.
