Thank you for visiting the website of Dr. Susan Percival, Professor of Nutrition.

The research in our lab focuses on modifications of the immune system by dietary factors. We study many different nutritional factors in a variety of model systems. Here is a recent video on an experiment we did looking at spices in inflammation. We are currently recruiting participants for our aged garlic extract study. More information can be found here.
